Mini Waffle Donuts

 Give a donut a pretty little facelift! 
Donuts are our favorite go to party treat. Partly because they are so easy and fun to customize, but mostly because they're delicious! 
 For our Easter table we bought some fresh plain donuts and added a simple glaze. Once it dried we piped them with pastel colored frosting using a decorators bag and a closed star tip. The waffles are toasted mini Eggo's dipped in blue candy melts and topped with a few sprinkles. We added some Cadbury mini eggs and bunny's/chicks from the dollar store to Easter a few of them up! Get creative, you can top these babies with anything.

Glaze
  • 1 1/2 cups powdered sugar
  • 3 Tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 small pinch salt
  • 2 – 3 Tbsp milk
  • Food coloring and sprinkles (optional
Directions
  • For the glaze:
  • In a flat bottomed bowl, whisk together powdered sugar, melted butter, vanilla and salt then stir in 2 Tbsp of milk, adding additional milk 1 tsp at a time to reach desired consistency and whisk until smooth. Tint with food coloring if desired. Warm in microwave in 6 – 10 second intervals on HIGH power to warm as it begins to set while dipping doughnuts, as needed, whisking after heating. 
Simple Icing
  • 5 sticks unsalted butter, softened  
  • 3 tablespoons of high ratio shortening
  •  9 cups icing sugar
  •  1 1/2 teaspoons pure vanilla extract (or almond extract if preferred)
Directions
  • Beat butter, shortening and 3 cups sugar with a mixer on medium speed until combined. Reduce speed to medium-low, and continue to beat, gradually adding remaining 6 cups sugar, 1 cup at a time. Raise speed to medium-high; add vanilla. Beat until pale and fluffy, about 3 minutes more.
